You know in Texas we love our beef and our big red wines. I recently visited the newly opened Matador Meat and Wine, a Plano store that pairs high end, custom cut steaks and other cuts of beef with 58 labels of boutique, small production wines. The proprietors, Matt and Colleen Peterson opened the store when they realized there was not a high end “neighborhood” butcher shop. The store features on demand cuts of prime, certified Angus beef from Texas and Omaha, free range chicken and other premium cuts of meat. Throw a solid selection of “off the beaten path” wines into the mix and I think Matt and Colleen have a “meaty” concept that will work well in the Lone Star State.
